Cajun Desserts

We are having our monthly potluck and sales meeting at Keller Williams.   The theme is "Cajun".  I looked up Cajun Desserts and found bananas, pine apples and pecans.  So I made this Chocolate Bourbon Pecan Pie.  

2/3 cups white sugar

1 cup corn syrup

2 tblsp bourbon whiskey

3 eggs

1/3 cup melted butter

1/2 tsp salt

1 cup coarsely chopped pecans

1 cup semi-sweet chocolate chips

1 - 9 in pie crust.

Preheat oven to 375 degrees.  Beat the sugar, corn syrup, bourbon, eggs, butter and salt together in a mixing bowl until smooth and creamy.  Fold in the pecans and chocolate chips.  Pour the mixture into the prepared pie crust.  Bake for about 50 minutes.  Cool before serving.

It looks and smells really good, I will tell you later how it was.
